4 quick and tasty courgetti recipes

Have you ever found yourself looking for a tasty alternative to pasta or noodles? Well courgetti could be the answer. Not only does it taste great, it is an easy way to increase your vegetable and vitamin A and C intake. Follow these four recipes and see for yourself!

Recipe 1 - Greek Courgetti Salad

Ingredients

  • 50g Courgetti 
  • 50g Olives 
  • 50g Sundried Tomatoes 
  • 50g Feta 
  • ½ Cucumber
  • Drizzle of Extra Virgin Olive Oil 

Method

  1. Start by slicing the feta into small cubes and topping with oregano.
  2. Slice the cucumber into disks. 
  3. Combine courgetti, sundried tomatoes, olives, cucumber and feta into a bowl and toss. 
  4. Serve and drizzle with extra virgin olive oil. 

Recipe 2 - Courgetti Fritters

Ingredients

  • 500g Courgetti 
  • 3 spring onions 
  • 1 tsp Cumin 
  • 100g self-raising flour 
  • 1 large egg 
  • 1 cal spray

Method

  1. Mix together courgetti, finely chopped spring onions, egg, cumin and flour in a bowl.
  2. Season with salt and pepper. 
  3. Heat a non-stick pan over a medium heat with some 1 cal spray.
  4. Use a fork and spoon to create small fritter parcels and add them to the pan. 
  5. Flip after 2-3 mins until golden brown on both sides. 6.Serve warm! 

Recipe 3 - Creamy Tomato Courgetti

Ingredients

  • 250g Courgetti 
  • 4 Slices of Parma Ham 
  • Handful of Basil 
  • 2 tbsp Mascarpone
  • 200g of Tomato Passata 

Method

  1. Heat a frying pan over a medium heat and add in the Parmaham slices until they are crispy. 
  2. Remover from the pan and set aside until cooled. 
  3. Add mascarpone to the pan until it starts to melt, then add tomato sauce and season.
  4. Once bubbling, add in courgette and stir for 1 minute until covered in the sauce.
  5. Stir in ham and basil, then serve. 

Recipe 4 - Prawn and Courgetti Laksa

Ingredients

  • 250g courgetti 
  • 150g cooked prawns 
  • 2 tbsp red curry paste
  • 400ml low fat coconut milk 

Method

  1. Start by heating a pan to a medium temperature. 
  2. Add in red Thai curry paste and stir until warmed through. 
  3. Then add the coconut milk to the pan and stir until the colours are bright and the pan is bubbling.
  4. Add prawns and courgetti and stir for no longer than 1 minute, be very careful not to overcook this.
  5. Top with coriander!
