Hot Honey Halloumi, Chickpea and Vegetable Traybake Recipe

If you’re craving a meal that’s full of flavour and easy to make, this traybake is sure to hit the spot. Sweet, sticky hot honey drizzled over golden halloumi brings a delicious kick, while roasted vegetables and chickpeas add heartiness and texture to every bite.

Our hot honey halloumi, chickpea and vegetable tray bake is perfect for batch cooking or meal prep. Plus, it keeps well in the fridge and tastes great served hot or cold. It’s a fuss-free way to enjoy a colourful, flavour-packed meal without spending hours in the kitchen.

Ingredients

  • 225g halloumi
  • 1 tin of chickpeas
  • 1 medium courgette
  • 1 red pepper
  • 1 red onion
  • 1 medium sweet potato
  • 200g pot of hummus
  • 4 flatbreads or pitas
  • 4 tablespoons of honey
  • 1 red chilli
  • 60g rocket
  • Salt and pepper
  • 2-3 tablespoons of olive oil

Method

  1. Preheat the oven to 200°C fan.

  2. To prep your ingredients, cut the halloumi into large cubes. Peel and chop the potato, then cut the courgette and pepper into bitesize chunks. Cut the onion into quarters and separate, then slice the chilli.

  3. Drain and rinse the chickpeas then and add them to a large roasting dish. Also add the peppers, courgettes, onion and potato. Drizzle the vegetables with 1 tablespoon of olive oil.

  4. Add the halloumi on top of the vegetables, then season with salt and pepper, and oven cook for 25 minutes, stirring the vegetables halfway through cooking.

  5. In a small saucepan, add the chilli and honey to a low heat. Allow to bubble gently for a few minutes, remove from the heat but keep the honey warm by using a lid.

  6. Remove the halloumi, vegetables and chickpeas from the oven and drizzle with half of the hot honey. Return to the oven for 2 minutes.

  7. At the same time, warm the flatbreads or pita in the oven for a couple of minutes.

  8. Remove the traybake from the oven and serve alongside warm bread, salad and hummus.

Leftovers:

Pop any leftovers into an airtight container in the fridge and it will keep for up to 3 days. If you want to eat it hot, make sure you store the salad and hummus separately, then reheat in the microwave until piping hot.
