Preppable Protein Bagels Recipe

INGREDIENTS:
- 4 protein bagels, sliced
- 250g egg whites
- 2 eggs
- 1 large tomato, finely diced
- 6 button mushrooms, finely diced
- Small handful of baby spinach, sliced
- 4 slices of light cheddar cheese (optional)
- Salt
- Freshly ground black pepper
- Low calorie oil spray
METHOD:
Preheat the oven to 200°C / fan 180°C.
In a large bowl, whisk together the egg whites and whole eggs.
Add tomato, mushrooms and spinach. Season with salt and pepper and mix well.
Grease a baking dish with low calorie oil spray, then pour the egg mixture into the dish.
Bake for 5-10 minutes, until the frittata is cooked through and slightly golden. Allow it to cool.
Add egg onto the bottom of the bagel, place a slice of cheese on top of each frittata square (optional) and top the bagels. Wrap each bagel in foil and freeze.
When ready to use, remove the bagels from the freezer and let them defrost overnight.
When ready to eat, pop them into an air fryer or bake them at 200°C for 5-6 minutes, until the cheese is melted and the bagel is heated through.
If prepping for the week, store in the fridge for up to 3 days or freeze for up to 3 months for easy meal prep.
