Gnocchi Bolognese Recipe

Gnocchi Bolognese is a hearty, nutritious dish with 4 servings of veggies per portion and it’s under 500 kcal! It’s the ideal balanced meal, perfect for fuelling your gym sessions whilst staying low calorie.

Ready in just 40 minutes, this dish is ideal for a cosy dinner or as meal prep to enjoy throughout the week.

The lean beef mince, cooked with fresh veggies and a rich tomato sauce, is paired with gnocchi and topped with fresh basil and grated parmesan.

This flavorful twist on a classic Bolognese will transport you to Italy!

INGREDIENTS:

  • ½ tbsp extra virgin olive oil
  • 1 onion, finely diced
  • 2 garlic cloves, crushed
  • 1 carrot, finely diced
  • 1 courgette, finely diced
  • 250g 5% fat lean beef mince
  • 1 tbsp tomato puree
  • 1 x 400g tin of chopped tomatoes
  • 1 tbsp Worcestershire sauce
  • 1 tbsp oregano
  • ½ beef stock cube
  • Salt and pepper, to taste
  • 300g gnocchi
  • 30g fresh basil, torn
  • 20g parmesan, grated

METHOD

  1. Add olive oil to a deep dish frying pan and bring up to a medium heat.

  2. Add onions and sauté for 5 minutes.

  3. Add garlic and fry off for 1 minute, until fragrant.

  4. Add carrot and courgette and fry off for 3-4 minutes until starting to soften.

  5. Add lean beef mince and fry off until browned.

  6. Add tomato puree, chopped tomatoes, Worcestershire sauce, oregano and season well.

  7. Make up stock cube with 200ml of boiling water and mix well.

  8. Leave to simmer for 15 minutes, stirring regularly.

  9. Whilst the Bolognese simmers away, cook gnocchi as per packet instructions. Then drain and set aside.

  10. Once the Bolognese is cooked and the sauce has thickened, season to taste. Stir through gnocchi and serve. Top with basil and a sprinkling of parmesan.
